Try this fertility friendly carrot and coriander soup. It’s one of my favourite soups so easy to make and so warming and hearty on a cold winters day
Ingredients
- 1 Large Potato
- 4 Carrots
- 1 Onion
- 1 Litre of reduced salt vegetable stock 2 x cubes
- 1 x tsp of dried coriander
- Fresh Coriander
- Olive Oil
Method
- Peel and chop the potato and carrots
- Dice the onion
- To a large pan add a splash of olive oil at a low heat wait till the onion becomes translucent.
- Add in the potato, carrots and tsp of coriander
- Then add in the litre of stock and simmer till the carrots are cooked . This should take about 15 to 20 minutes
- Take the pot off the heat and add the fresh coriander
- Place the pot on a hard surface making sure the pot wont slide. Blend the soup with a hand blender
Serving Suggestions
- Serve with fresh bakery bread
- Sprinkle some grated cheddar cheese on top
- Suitable for freezing
